Thank the Romans

Thousands of years ago, the Romans discovered yeast. They found that after leaving baker’s yeast (dough) out in heat, it was usable once sugar was added.

Yeast grows and lives in liquids, such as wastewater. Today, most yeast is purchased in a dry form for storage purposes. Basically, you are using yeast that has been dried in the same way the Romans did.
